Single-source honey (often called monofloral honey) typically costs more because it can only be produced in areas where one dominant type of flower or tree is available for bees to forage. That makes it rarer, more seasonal, and harder to produce consistently. Those factors that are reflected in its price.
Honey crystallization is a natural phenomenon indicating its quality. You can return it to a liquid state by placing the jar in a warm water bath (around 40°C) and gently stirring until it melts, avoiding direct heat. To prevent crystallization, store honey at room temperature (22–25°C), away from cold and direct sunlight.
Honey should be stored away from sunlight and heat, at room temperature (22–25°C). It is best kept in its original jar or in tightly sealed glass or plastic containers, avoiding metal containers to prevent oxidation. Refrigeration is not recommended, as it accelerates crystallization.
